Apple & Parsnip Soup


2 tbsp butter
1 onion, roughly chopped
350g parsnips, roughly chopped
2 garlic cloves, grated
350g bramley apples, peeled and chopped
750ml vegetable stock
150ml whole milk
Sea salt and pepper, to taste
Dried apple slices, to serve


Melt the butter in a large saucepan over a medium heat. Add the onion and parsnips and pop on a lid. Stir occasionally and let cook down for 15 minutes until softened. Add your apples and garlic and fry for a couple more minutes.  

Pour over the vegetable stock and allow to bubble. Simmer for 20-25 minutes or until the parsnips and apples are quite soft. Take off the heat and allow to cool for a few minutes. Season to taste and then blend until smooth.

Add the milk to let down and reheat if needed before serving. Add a dried apple slice just before it hits the table.
