A sweet and simple drink to celebrate the clocks turning forward, brighter days, and longer evenings... even if it doesn't quite feel that way outside yet.

Hibiscus & Passionfruit Cooler

Serves 4

Ingredients:

25g dried hibiscus flowers
500ml boiling water
4 passion fruits
Sparkling water
Ice 

To make the hibiscus tea, place the dried flowers in a teapot and cover with boiling water. Allow the flowers to bloom and infuse into the water for 10 minutes.

Strain the tea and allow to cool. Place in the fridge or freezer if you’d like speed up the cooling. Fill each glass with a handful of ice, and slice the passionfruit in half, scooping out the flesh of a passionfruit into each glass. 

Pour over the hibiscus tea and top up with sparkling water.
