Wilder x Rye London Winter Edition.

Join us for a festive evening of exploring the beauty of ingredients gathered from the land and sea, in our light filled studio.

We'll gather over a five course menu with a focus on the use of wild ingredients sourced by our forager Yun, and curated by Richard Mclellan.

After travelling extensively around the Middle East and Europe, Richard became fascinated by flavour and produce. Returning to London, he cut his teeth in some of this city’s finest Michelin starred restaurants from Tom Aikens and Pied a Terre taking up the position as Head chef at Alyn Williams and Typing Room. 

During this time Richard built strong relationships with some of the best farmers  and producers in the country, and pulls on modern and old techniques for fermenting, curing, pickling, using wild herbs, flowers, berries and fungi.

Yun picks from the woods, beaches and grassland areas of South Wales, and over the course of the evening we will learn about the provenance, flavour complexity, seasonality and usage of these ingredients.

Wilders ethos is origin and simplicity.

A greeting cocktail will be put together by Alan Sherwood formally from Scout, and the meal will be finished with Jing tea. Biodynamic organic red, rosé and white wine will be served alongside the supper.
